2 or 2-1/2 lbs of hamburger
2c minute rice
3 eggs
1 tsp salt
1 tsp pepper
3 green peppers
1 large can of tomato juice

Clean & half green peppers; boil in salt water until almost soft

Mix hamburger, rice, eggs, salt & pepper together form meatballs (large enough to sit inside the halved green pepper). Place in halved green peppers (l leave some out, in case someone doesn’t like the green peppers). Place in pan & cover with tomato juice.

Simmer over low heat until meatballs are cooked through.

Use the sauce as a gravy. If it required thickening mix cornstarch with water and stir into sauce as needed.

** This goes great with mashed potatoes
